I found the tilt controls more difficult to use than the analog sticks, but a lot more fun. I found the tilt was too sensitive. Eventually developers will start adding a sensitivity adjustment, I think.

I played with the tilt controlls on an in store demo of motorstorm at target, while it can be a bit unwieldy, you begin to get a hang of it. Its just not as pinpoint precise as using the analog sticks.

I think it must have been poorly configured as I found it impossible to go straight forward. I spent two or three minutes trying, but it just wasn't right.

I don't understand how you had trouble with the motion sensing in motorstorm. I have only played the demo 3 times and i think motion sensing was the best idea Sony could have ever came up with. All of the vehicles in the game of course react differently to the amount of tilt you actually give the controller....big trucks turn like shit while bikes turn really sharp and need less movment with the controller. I love the game and the controls, but i never once used the joystiqs. Joystiqs are now a thing of the past for flying and driving games for me atleast.
